Tomato soup recipe

On a cold rainy day I like to have something warm with my lunch.

What to do when there are no leftovers from yesterday? Well, you throw together a simple tomato soup.

I always go by my intuition and use what's available, but some say, "hey, that's a nice soup, what's the recipe?"

Well here it is:

I this case I made two full cups, and I'll give the quantities below for appr. two cups.

I start with two spoons full of both chopped onion and grated carrot and stir fry that in a two spoons of olive oil. When that gets brownish I add 50/50 tomato juice and water. I don't use 100% tomato juice, to keep the soup a bit lighter. When using tomato concentrate you made even get away with 25-30% concentrate and the rest water.
The I add a good spoon full of dried leeks, a small spoon barley flakes, a bit of garlic and sambal (spicy chili/piri paste), a slice of ginger, salt and a sniff of smoked sweet pepper powder. Finally salt and the secret ingredient, a tiny bit of sugar.

Of course everything goes to (my) taste, so next time I'll use less flakes and more sambal.

Instead of flakes you can of course use pasta, rice, noodles or nothing. Flakes are almost instantly cooked, so that's nice.
