I just saw this video on lemongrass and part of it is how to bind lemongrass stalks to store in easy-to-access packages in the freezer. I love it! Lemongrass is not the easiest to use once dehydrated.

I am such a fan of marinated and grilled, baked or panfried tofu. I will press tofu, slice, pop into a ziplock bag with a marinade, and freeze. I make the marinades up on the spot from what I have - often with Indian or Asian flavours. Any sort of Asian dipping sauce is always a winner (and I have lots of recipes for those). Or begin with an Indian green chutney and add other bits and pieces from the fridge.
