The big problem with the electrical grid is that it needs to be stable in order to function.
The 'old' way was to produce always as little as possible and when needed push tha gas pedal.
The new way has some difficulty with this: sometimes sustainable sources produce too much and sometimes too little [or none]. And you don't want to pedal more suffocating gasses.
Other than using the power when it's available,
there might be a solution to that: a two-way-use of the EV battery [V2G]:

In 2016 Fortum piloted using 70 domestic hot water tanks as a distributed dispatchable asset or #VirtualPowerPlant, and offering their aggregate demand response to Fingrid flexibility markets.

Unfortunately this solution was not scaled up. Last winter, it might have also smoothed spot price volatility and mitigated risk of load shedding.
