Nykteri Reserve '18 (85% Assyrtiko) is in a great place today--developed but young, ripe and fresh. It can hold a lot longer, but it's proving irresistible now. Santo Wines has a restrained Nykteri style--no oxidation here!--but deep & delicious with a firm finish. The balance is good, & the fruit absorbs the wood, mostly fending off the alcohol.

"Reserve" here means fermented in wood, then aged 9 months, not just three.

This eccentric Assyrtiko style is not for the shy. It's orange in color now, but less oxidative than very ripe and deep. There are some more restrained Nikteri  (Sigalas uses an alternate spelling) versions on Santorini, but this is a blockbuster, while controlling the oxidation. It's ripe and delicious.

The back label (pic 2) speaks of sugar, but note that this has less than six grams. It is not exactly a dessert wine.

I haven't opened a bottle of this oaked Santorini (all Assyrtiko) in a few years. The last one was very good, but showing a hint of oxidation. (Predictably, then didn't get to this final bottle for a few more years!) 

This '07 is way better than in its youth--Brilliant. (It's about the bottle, not the wine, as the wine ages; an old saying.) Fresh, concentrated and ripe, it's gorgeous. It is obviously oaked, but handles the wood extremely well.

Classic Vinsanto--mostly Assyrtiko, a dollop of Aidani, from very old vines (60+). Sun dried grapes. This adds 300 g/l of sugar. Yet, it doesn't seem that sweet. There is power here and fine acidity, too, even as rich as it is. With some age, it's gone fully dark in color, but it also isn't decayed at all, just concentrated and caramelized. Absolutely delicious. Six years in barrel before release. Around $40 then for a 500ml. Just 11% alc. #wine #vinsanto #greece #santorini

... so the nephews dove for some mussels & sea urchins, organized a heap of imported shrimps & a dozen fresh oysters.

The older generation meanwhile collected & boiled wild herbs, cooked fava beans & draped around green onions & vegetables because of Καθαρή Δευτέρα

As wine & tsikoudia {spirit] are off limits they had beers to comply with the Orthodox requirements for fasting.
They are such a lovely bunch of resilient & hedonistic souls...

The quakies between the north cape namely Oia and Amorgos island have gotten weaker. Schools opened again, Santorinians returning. Family will move back to their home on the Caldera cliffs.

Down in Baxedes, the safest spot around they resisted all calls for evacuation. Yesterday was Καθαρή Δευτέρα [Pure Monday] a high Orthodox holy day, start of the fasting period before Easter.

Meat, fish strictly forbidden...
