Dinner tonight is my variation on dirty rice, using Cajun-style sausage (not andouille, but Cajun seasoning) instead of the ground beef called for.

Wish me luck.

For myself, rather than the rice, I'll have "loaded cauliflower" (think of a loaded baked potato but with mashed cauliflower).

I’ve got a lot of cooking I collected evidence of in the last few days, but it’s still delightful to me that one of my favorite breakfasts is just a bunch of shelf stable stuff tossed together in a fridge overnight:

- 50g rolled oats
- 100g oat milk
- 2 dates, thinly sliced
- 30mL (2 Tbsp) “baking” splenda
- 2.5mL (1/2 tsp) vanilla extract

Why yes, I did make almost exactly the same think for lunch today. Asha noodles, broccoli parboiled in the noodle water, crispy egg, scallions and some gochujang mayo they had at the awesomest food pantry up in Skagit county. Super spicy since the monsters just had PB&J for lunch today.

One thing I like as much as mothing is trying to recreate #takeaway as #fakeaway. We love Nepalese food and so, for #Vegan Wednesday (is that a thing?) I had a bash at some Nepalese *style* dishes that we often order.

Made 4 #dinner dishes:

Split pea dal tadka, farsi takari (a kind of butternut squash stew), aloo methi potatoes and, of course, my easy peasy naan bread. Enough leftover to enjoy it all again tomorrow!
