Meg MakerThis is the second year I’ve overwintered lettuce and spinach in NH. I direct-seed in late August, covering the rows with hoops and plastic in Oct. By March the soil starts to thaw and, critically, day length is sufficient to stimulate new growth. By late April I get leaves, and by mid-May there’s enough for a big daily bowlful of greens. Meanwhile, newer seedlings will start yielding in about four weeks.
