You know, one of the most underrated things about being an adult is that you can just *go buy a strawberry/chocolate ice cream cake* because you want one. You don't have to ask anyone, or wait for a birthday, and you can eat as much of it as you want 🍓🍰🤤

Baking is like art - you need to be creative, free in your expression, think out of the box, and most of all you need to play.
I play all the time when baking. I don't have all those fancy and expensive baking tools so I improvise 😎

In this case I wanted to make a creamy cake with walnut pastry. I made the pastry in a big tray and cut it in half when it colded down.
Spread raspberry jam on one half, and whipped cream on top of that. Put other half of the pastry on top and realised it was much higher then I thought it would be which was a problem. Why? The idea was to put a chocolat cream on top of the cake. The cream is chocolate melded in cream for whipping.
In order to do that I made a mold out of aluminium foil to hold the cream untill it cools down.

Yes, it's nothing special but it came in handy when I needed to finish the cake.
If I waited for the cream to cool down I would have to whipp it in order to put it on top of the cake which means that the texture would be very different. And in the end, it's all about that silky-chocolate cream texture that comes perfectly together with walnut pastry, raspberry jam and whipped cream 😋

Life is short, rules are too many but no one can tell you how to garden and bake 😎💪🍀🍰❤️

And after dinner that night I got to see and eat kid2's cake! I wasn't allowed to open the fridge for a day and half before that night - though I had been asked for input a week+ before. The cake was finished after dinner. I did get a lick preview 😋 of the ganache drip - kid2 got me the spoon while I was in the living room.

That's fresh cream frosting - light and airy and Devil's Food Cake inside.

Fair call. IMO cake is one of those foods that's only worthwhile when it's very good; otherwise it's disappointing.

After hours walking around taking photos, my plan was to end the afternoon with a pint and some pub grub before heading back to the station.

Found a couple of closed up pubs, the cafes are already closed for evening (5pm), fortunately a single cafe still open, so putting back all the calories I walked off, before I head for the homeward train.
