@FiveSeventeen. Funny you should use that word! My mouth experienced this thing called "paraesthesia," which I had never heard of, and is the result of the #sichuan peppers. It's a numbing of the mouth and a vibrating of the lips and tongue. And the taste of the water was transformed, I think because of the vinegar in the mapo tofu. What a wild, wonderful #food adventure!

I love #eggplant every which way, but yuxiang is pretty special. Too hot (and fragrant) for indoors. Cooked per Dunlop recipe more or less - fry up salted, rinsed eggplant (3 batches), cook the douban (I used pork fat), then chopped ginger & garlic, add chicken stock (minors) + soy + sugar, add back , add chinkiang vinegar, potato starch slurry to thicken, scallions.

This makes me crave spicy Chinese food #earthquake #sichuan
